Steak on Potatoes

Prep: 5-10 minutes Bake: 1 hour 15 minutes (under an hour if you microwave potatoes)

I came up with this thanks to an extra steak and not wanting to cook a sub. I had made philly cheesesteaks the day before and that became my inspiration for this meal. I took my twice baked potatoes and the Philly cheesesteak and mixed them together. This was done quickly and came together much better than expected, even though I know steak on potatoes is literally a thing. Serves 2

Ingredients

  • 1 ribeye steak

  • 2 Yukon or golden potatoes

  • 1/2 green pepper diced

  • 1/4 sweet onion diced

  • 1/4 cup shredded cheese of your choice. I used Colby jack and an aged white cheddar

  • 2 tbls butter

  • 1/4 tsp rosemary

  • 1/4 tsp thyme

  • 2 tbls heavy cream, slight more if needed

  • Pinch of salt

  • Dash of pepper

  • Dash of onion powder

  • 2 tbl Worcestershire sauce

Prep

Potatoes

  1. Preheat oven to 400 F (204 C), if you would prefer to microwave then skip and just do that for 5-7 minutes or longer til potatoes are soft. Still prick them before hand and no foil

  2. Prick the potatoes with a fork and wrap in foil

  3. Bake for 1 hour

  4. Line a baking tray with foil to prep for the next part

  5. Remove from oven and slice in half vertically not horizontal

  6. Use a spoon to scoop out the insides and add to a bowl while keeping the skin intact to make a shell

  7. Lay the skins on the baking tray, insides facing up

  8. (Drizzle with olive oil on outside if you would like a little crisp)

  9. Add the heavy cream, rosemary, thyme, and 3/4s of total cheese in the bowl

  10. Use a fork to mix and mash as you go

  11. Add the onions and green peppers and mix in as well

  12. Use the spoon to scoop the mashed mixture back into the shells and fill and shape as a dome

  13. Add the remaining cheese on top

  14. Bake for 10- 15 minutes longer until cheese is perfectly melted

  15. (Optional) broil for a few minutes to really crisp it up

Steak

  1. Slice the ribeye into thinner ribbons

  2. Add to a bowl with the salt, pepper, onion powder, and Worcestershire

  3. Mix well and let marinate for at least 20 minutes

  4. Preheat a grill or good enough pan to a medium to medium high heat

  5. I wait to start cooking once potatoes are on the second bake, but add to grill or pan and cook to personal choice of doneness. I go about medium

Assemble

  1. Add the steak on top of the done potatoes

Afterthoughts

This was lovely and worked really well together. The potatoes are just good with probably anything and the rosemary and thyme gave an extra hit of flavor. The steak was nice and juicy and added to the mixture so there was no concern of a dry taste. I would easily make this over and over for myself and others. I can make it in full for a lunch hour with microwaving the potatoes.
