Restaurant Review: The Grilled Cheeserie

Nashville has so many gems when it comes to things to do and restaurants to try. The Grilled Cheeserie is one such gem that I am excited I found thanks to Guy Fieri. I found their food truck from his visit and it came highly rated so we found the brick and mortar to visit one night.

Founded by classically trained chef Crystal Bogan and her husband Joseph, their goal was to elevate a nostalgic yet simple household dish. A pimento mac and cheese had Guy Fieri reliving his childhood. Fine dining is the standard for everything on their menu which ranges from artisan grilled cheese sandwiches to salads, soups and a milkshake bar. They currently maintain a restaurant, food truck, cafe and catering.

Buffalo south grilled cheese

We visited the location in Hillsboro, that is nestled with an Italian grocery and restaurant. We came for dinner and sampled some grilled cheese, a salad, tator tots, and milkshakes.

When I checked the menu, the choice was a fast and obvious one. In their specialty menu, a quesabirra grilled cheese. I mean, look at the toppings list:

“white cheddar, birria beef, cumin-lime aioli on country white sourdough served with a beef consommé dipping jus & a fresh lime wedge”

There was no way I was getting anything else after reading that. I paired it with a classic chocolate milkshake. My grilled cheese had a nicely toasted outer crust. The stacked insides, were dripping, tender, and bursting with flavor. The cheddar and birria were the strongest flavors as you’d want, and the sauce did not get in the way. The dip was just as good as better taco places, and I was a happy camper, devouring this sandwich.

My friends also got the buffalo south which features “white cheddar, grilled chicken, buffalo sauce, gorgonzola crumbles, pickled celery on sourdough” and they raved about these flavors as well.

Other dishes that made appearances on our table were the peanut butter milkshake, an autumn chopped salad, a cookies and cream milkshake and the birra “totchos” which were the birria toppings with a red pickled onion tossed in, on top of tator tots. They were also a delight of flavors with the crisp potato totes filling in for the bread. I would easily visit this place again and again, though I’m not sure anyone could convince me to get anything besides my quesabirria grilled cheese.
