C'est La Cuisine: Twice Baked Potatoes

Prep: 3 minutes Bake: 1 hr 15 minutes

In honor of Bioshock Infinite and the Lutece Twins, I made these twice Baked Potatoes. A creamy, delicious, potato that is super extra for that taste. Easy and low maintenance is the way to go. This makes 1 potato cut in half. Ideal for 1 or 2 people.

Ingredients

  • 1 potato

  • 1 slice of bacon

  • 2 tbls shredded cheese of your choice, I used aged English Cheddar

  • 1 tbls milk

  • A dollop of sour cream (I didn’t have any and used heavy cream instead)

  • Pinch of Salt

  • Any other toppings as desired

  • 2 tbls butter

Prep

  1. Preheat your oven to 400

  2. Wrap your potato in foil and bake for 1 hour

  3. Cook your bacon and any other toppings that might need cooked

  4. Remove the potato and cut in half longways

  5. Prep a baking tray with foil on the bottom or parchment paper

  6. Scoop out the insides pf the potato and add to a small bowl, try to keep the skins in tact

  7. Add all toppings into the bowl and stir until mixed well, you will be mashing the potato

  8. Scoop back into the two halves as evenly as you can, if you would like, you can add the cheese and bacon on top here

  9. Bake for 15 minutes

Afterthoughts

This was creamy and delicious. I loved every bite. The potato was soft and well flavored. Everything went together nicely. These are easy to make and easy to make a lot of servings. I highly recommend this for any singles, duos, or parties.
