Simple Chicken Quesadillas
Prep: 20 minutes Cook: 3-5 minutes
I love most quesadillas. Please give me plenty of cheese and a delicious sauce and you can’t go wrong no matter what else you put into it. And the best part, you don’t need a fancy press or anything, just a skillet for crunchy outsides and great insides. As with many things, you can adjust toppings as you please.
Ingredients
- 1 chicken breast 
- Salt to taste 
- Pepper to taste 
- Thyme to taste 
- Paprika to taste 
- Chili powder to taste 
- 1/4 onion chopped 
- 1/4 red pepper chopped 
- 2 cups shredded Mexican cheese mix (or whatever cheeses you want) 
- 2 tbls mayo 
- 1 tsp ketchup 
- squirt of lemon juice 
- Hot sauce as you want 
- 2 6-in flour tortillas 
Prep
- Rub the chicken with the salt, pepper, paprika as you’d like 
- In a pot boil enough water that would cover the chicken 
- Add the chicken to the water and more of the spices to the water to boil together 
- When the chicken is done (temp 180 F is best, or at least no longer pink or clear inside) remove from the water and add to a small bowl 
- Shred the chicken 
- Add the chili powder and toss 
- Chop the onions and pepper if you need to 
- In a small bowl add the mayo, ketchup, lemon juice and hot sauce and mix to create Salsa Golf sauce 
- Heat a skillet to medium heat 
- If not non-stick spray with pam 
- Add a tortilla to the skillet 
- Add a quarter of the cheese and half of the veggies on top 
- Let this melt 
- Add half the chicken, the sauce and another quarter cup of cheese 
- Fold the tortilla in half and let this warm and melt the cheese on top 
- Add to plate and repeat with the other half of the ingredients 
Afterthoughts
This made for a great tasting quesadilla. The outside was delightfully crunchy and had a nice crisp sound as I chopped through to make slices to eat. The insides were warm and melty goodness. I went crazy with my cheese. These are pretty thick, you likely could get almost 3 with a single chicken breast. If you need to keep these warm you can set your oven to 200 F and add a tray to leave them on. This was fast and so delicious.
