Peanut Butter, Chocolate Chip Blondies
Prep: 15 minutes Bake: ~30 minutes or until center bakes through
I tried blondies before and did poorly, but this recipe from Sweetest Menu was great. Super easy and shows me the mistakes that I made. I had a lot of fun making this and recommend it.
Ingredients
- 1 stick melted butter 
- 1/2 cup smooth peanut butter 
- 1 1/4 cup brown sugar 
- 1 tsp vanilla extract 
- 1 egg with an extra yolk 
- 1 1/4 cup flour 
- 1/2 tsp baking powder 
- Chocolate chips as you like 
Prep
- Preheat your oven to 350 F (177 C) 
- Whisk together the eggs, butter, sugar, vanilla, and peanut butter. You don’t want to be too harsh here, just a gentle whisk 
- Add the flour and baking powder 
- Stir until it’s a nice smooth batter 
- Add the chocolate chips 
- Add to a prepared 8x8 tin. I used glass, which caused issues with the center baking. I had to keep baking the center after removing the outsides that were done before it was ready, probably like an extra 10 minutes or so. Using a metal tin would allow this to bake much better I believe. 
- Bake for at least the 30 minutes and check the center, it will start to brown to know it’s done 
Afterthoughts
I wish I paid attention to pan type but the taste was amazing. The peanut butter was nice and creamy and the chocolate chips weren’t overpowering but nice to have. When I finished baking it correctly, it was soft with the perfect crisp on the edges.
