Fake Taco Bell Beef Enchirito

Prep: 5 minutes Cook: 10-15 minutes

I loved the beef enchirito from Taco Bell and have been thinking about it since they stopped selling it. They also are selling their sauces in grocery stores now so I’m trying to get the tastes I loved back. This is missing the beans in the center, and the sauce isn’t exactly the sauce they used, I don’t think but was a good and cheap rendition. You can add refried beans to get a better copy cat. This makes 1 serving

Ingredients

  • 1/4 pound ground beef (or plant substitute)

  • 1 burrito sized soft tortilla

  • 1/4 cup shredded cheddar

  • 1/4 chopped onion (more or less based on taste)

  • 2 tbls sauce or 1 packet of taco seasoning of preference. I used Ortega

  • 1/4 cup Taco Bell Hot Sauce (or sauce heat of choice)

Prep

  1. In a pan on medium heat, cook the ground beef

  2. Add the taco seasoning and mix well

  3. Reduce the heat and add some of the onion

  4. Heat fully

  5. Add the meat to the tortilla and wrap in the burrito

  6. Heat a second pan to a low medium heat and add the burrito

  7. Lightly Brown the seam side first and flip to brown the back more fully

  8. Reduce the heat to low

  9. Flip again, and pour the Taco Bell Sauce on top and allow to pool to sides

  10. Add the cheese and onions on top

  11. Cover with a lid and heat until cheese melts

  12. Remove and enjoy

Afterthoughts

This was delicious. While the beans were missing this was the tastes I loved and a blast from my past. I enjoyed it and it takes barely any time to prepare. This was an easy lunch and I can make more anytime quickly and customize however I want. It might not be perfect, but it’s delicious.
