Southern Comfort Sausage Gravy

When I was a child my brother filled a bowl at a breakfast buffet thinking it was a soup. That was how sausage gravy came into my life. It was delicious and I have been trying it at every place I visit and today I tried making it for the first time. I came up with a slightly spiced, creamy, meaty mixture that went lovely on my biscuits.

Ingredients

  • 1/2 lbs ground sausage (any flavor that appears to you. I used mild)

  • 2/3 cup milk

  • 1/4 cup flour

  • Pepper to taste

  • Chili Powder to taste

  1. Use medium heat with a cast iron pan

  2. Add the sausage and cook through and crumble as you go. Make sure it all cooks and no red left

  3. Reduce the head to low and take the flour and sprinkle while stirring. Mix a bit at a time (not using all of it) with the sausage grease to make a roux and coat the sausage.

  4. Slowly start to add the milk and alternate adding this and more flour until you get the consistency you want. Sprinkle the pepper to taste and then add some chili powder to give it a kick.

  5. Up the heat again for a bit and stir as it warms all the way through

  6. I used Pillsbury biscuits and baked them at this point

  7. Butter and open the biscuits. Pour the gravy over them and enjoy.

Afterthoughts

This was super meaty but still had a lovely, full taste. The chili powder was a nice kick to mild sausage. Simple and fast to make and really hard to mess up. This fills you up and spreads the warm, gooey goodness through you and is a filling way to start the day.
