C’est la Cuisine: Beignets

Prep: 15 minutes plus 2 hour proving Bake: 2 minutes each

We had a theme of French Patissiere so one of my dishes was beignets. I have been wanting to make them for a while and I’m so happy I finally did it. So tasty!

Ingredients

  • 3 cups flour with more for later

  • 3/4 tsp salt

  • 3 tbls sugar

  • 1 cup milk

  • 2 tsp active dry yeast

  • 1 egg

  • 3 tbls melted butter

  • veggie oil for deep fryer

  • powdered sugar for dusting

Prep

  1. Warm the milk and add the yeast and 1 tbls sugar in a big enough bowl

  2. Let this sit for at least 5 minutes and it will foam

  3. In the bowl for a stand mixer or a bowl big enough for mixing vigorously, add the flour, salt, and 2 tbls sugar

  4. Add the egg into your milk and beat in

  5. Pour into the mixer and beat with a paddle on medium speed until you get it all mixed but not smooth yet

  6. Pour in the melted butter and resume beating to incorporate

  7. Switch to the hook attachment and move to high speed to knead for at least 6 minutes

  8. This should get you to the perfect tacky dough that isn’t too sticky

  9. Line a bowl in veggie oil and ball the dough to add to the bowl

  10. Cover and let rise for 2 hours at room temp

  11. When ready, roll out the dough on a lightly floured surface to about 1/4 inch thick

  12. Cut into squares

  13. Sift some powdered sugar into a bowl to coat the beignets after frying

  14. Fill a pot with enough veggie oil and heat for a deep fryer. It should be about 325 F

  15. Add the beignets one at a time and allow to brown each side. You will need to flip them as it will float above the oil. It should take about 1 minute to minute and a half each side

  16. Remove and set on a wire rack for the oil to drip off

  17. Move to the sugar and coat both sides while still hot

  18. Repeat with the rest

Afterthoughts

These are reminiscent of a donut and still amazing. They are best warm, but so sweet, airy, and brings a smile to the face. These were super easy to make and a lot of fun to share. This recipe should get you about a dozen and it’s worth it.
