C’est la Cuisine: Beignets
Prep: 15 minutes plus 2 hour proving Bake: 2 minutes each
We had a theme of French Patissiere so one of my dishes was beignets. I have been wanting to make them for a while and I’m so happy I finally did it. So tasty!
Ingredients
- 3 cups flour with more for later 
- 3/4 tsp salt 
- 3 tbls sugar 
- 1 cup milk 
- 2 tsp active dry yeast 
- 1 egg 
- 3 tbls melted butter 
- veggie oil for deep fryer 
- powdered sugar for dusting 
Prep
- Warm the milk and add the yeast and 1 tbls sugar in a big enough bowl 
- Let this sit for at least 5 minutes and it will foam 
- In the bowl for a stand mixer or a bowl big enough for mixing vigorously, add the flour, salt, and 2 tbls sugar 
- Add the egg into your milk and beat in 
- Pour into the mixer and beat with a paddle on medium speed until you get it all mixed but not smooth yet 
- Pour in the melted butter and resume beating to incorporate 
- Switch to the hook attachment and move to high speed to knead for at least 6 minutes 
- This should get you to the perfect tacky dough that isn’t too sticky 
- Line a bowl in veggie oil and ball the dough to add to the bowl 
- Cover and let rise for 2 hours at room temp 
- When ready, roll out the dough on a lightly floured surface to about 1/4 inch thick 
- Cut into squares 
- Fill a pot with enough veggie oil and heat for a deep fryer. It should be about 325 F 
- Add the beignets one at a time and allow to brown each side. You will need to flip them as it will float above the oil. It should take about 1 minute to minute and a half each side 
- Remove and set on a wire rack for the oil to drip off 
- Sift powdered sugar over top of each 
Afterthoughts
These are reminiscent of a donut and still amazing. They are best warm, but so sweet, airy, and brings a smile to the face. These were super easy to make and a lot of fun to share.
