Slow Cooker Cheesy Potato Soup

Slow Cooker Cheesy Potato Soup

Prep: 5 minutes Cook: Hours

I really want to get into soups to make sure I’m eating more veggies and also fast easy meals that just need reheated. I always have potatoes on hand and so I tried this out as my first soup.

Ingredients

  • 4 yukon gold potatoes

  • 1/4 onion

  • 1 cup chicken broth

  • 2 oz heavy whipping cream

  • Minced garlic to taste

  • ~ 1 tbls rosemary

  • ~1/2 tbls thyme

  • ~ 1 tbls oregano

  • any other spice or herbs to taste that take your fancy

  • Flour to thicken

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup butter

  • 1/4 block of cream cheese

Prep

  1. Chop your potatoes and onions into smaller bits

  2. Add all ingredients minus the flour into the slow cooker

  3. Set to medium or high (depending on your cooker, mine only has low or high so I did high)

  4. Allow to cook until the potatoes soften, you want the mixture to simmer more so than boil, this took around 4 hours but stir every half hour or so to check in on things

  5. As it starts to be finished add the flour in small doses and stir until it thicken a bit and is not so watery

  6. Add the cream cheese and allow to melt and stir

Afterthoughts

This smelled so good and the great thing about slow cookers is how they help your house smell great too. I loved this a lot. I didn’t add the flour at first and it was pretty thin but thickening helped. I reduced the amounts of broth and cream from what I had done to help reduce that as well. This was tasty though and went great with some dinner rolls.
