Cajun Spiced Potatoes, a Warming Side

I love that the more I learn, the more ways I find to apply or use it. This came about from remaking my Shrimp Monica recipe a few times and experimenting. I mostly only had potatoes at the time when this started and I’ve grown it from there. I think I’ve made a version I really love so I’m sharing it with you. Have a fun side dish of cajun spiced potatoes.

Ingredients

  • 1/4 tsp cayenne

  • 1/8 cup dry white wine

  • 1 cup heavy cream

  • 1/2 tbls lemon juice

  • 1 tbls olive oil

  • 1 medium potato

  • 1/4 onion chopped

  • 1/4 red pepper chopped

  • 1/4 green pepper chopped

  • 1 tbls Cajun seasoning

  • 1/2 stick butter

  • 2-3 cloves minced garlic

  • pinch of salt

  1. Heat a large pan on medium (or a cast iron dish which works great too)

  2. Melt the butter and add the peppers, onions and chopped potato. I julienne the potato since the small size cooks easier.

  3. Let this cook together until fragrant and stirring sometimes. This should take about five minutes.

  4. Add the dry wine and turn up the heat to reduce it

  5. Add the garlic and all seasoning while this is reducing

  6. Reduce the heat to medium again

  7. Add the olive oil, cream, and lemon juice

  8. Stir and let this warm; be careful to not boil the cream. You want to make sure the potatoes are soft and cooked through

  9. Remove from heat and serve

I love this dish. It has been something I make a few times a week as a meal during these times. I have a bag of potatoes and bottles of the rest and it’s been so easy to make. I’ve had to adjust in case I ran out of things but this is the best version of the dish. It’s a fun side that gives spice and would compliment most meat like steak, shrimp and other fish dishes. Made right, it’s tender and soft potatoes with a great compliment of veggies and spice to warm your insides. The creamy sauce is fantastic and and helps bring everything together.
