Valentine's Special: Blueberry Buttercream

Prep: 3 minutes Cook: 10 minutes

To celebrate those we love, cooking something delicious can bring smiles to all faces. Buttercream icing is some of my favorite types of icing and with a mixture of blueberries can make this extra sweet and fun.

Ingredients

  • 1 cup softened butter

  • 3 cups powdered sugar

  • 12 oz (at least) blueberries

  • 2 tbls heavy cream

  • 1 tsp vanilla extract

  • Salt to taste

  • Splash of water

  1. In a pot at medium heat, add a splash of water and the blueberries

  2. Stir often and simmer until the blueberries breakdown and liquify. This will be just a bit thick and not completely liquid depending on how much water you added

  3. Pour through a strainer to remove the skin and anything else from the mixture

  4. Set aside to cool completely

  5. In a medium bowl add the softened butter and beat until creamy

  6. Mix in the powdered sugar and mix fully to a fun cream

  7. Add the heavy cream, vanilla, salt and blueberry liquid

  8. Mix fully until you have a creamy icing.

  9. This can keep for a couple days in the fridge but needs softened to room temp before trying to spread

Buttercream is always a tasty addition to baked treats. Blueberry takes a butter cream and makes it slightly sweet and takes your treats to a new level. This is an easy and fun way to surprise any loved ones.
