Simple Chocolate Lava Cake

Simple Chocolate Lava Cake

Prep: 10 minutes Bake 12-16 minutes

I love lava cake so much. I have tried to make this before in cupcake form and it turned out so close. This one was it. This worked and was amazing. Having the right tool (a 4 oz ramekin) and this was super easy. Timing is everything and it is so tasty. This makes 4-6 depending on how full you make the ramekins.

Ingredients

  • 6 oz bittersweet bakers chocolate

  • 1/2 cup butter

  • 1 tbls cornstarch

  • 1/2 cup sugar

  • 2 eggs

  • 2 egg yolks

  • 1 tsp vanilla extract

  1. Preheat oven to 425 F (220 C)

  2. Make a double broiler with simmering water and a bowl (or just microwave this next part if you want)

  3. Melt the butter and the chocolate together and mix well then remove from heat

  4. Add the sugar and cornstarch to a bowl and mix together

  5. Add the sugar and cornstarch to the butter and chocolate and mix well

  6. Add the eggs, egg yolks and vanilla to the mix and whisk fully

  7. Take the ramekins (if you don’t have some a muffin tin works as well, just adjust time based on pan size to more or less depending on if bigger or smaller) and coat the inside with butter and sugar it to make it non stick

  8. Fill them at least half if not to full depending on how many you want to make

  9. Bake for 12-16 minutes, keep an eye to make sure it’s right. You want it to wiggle a bit as you’re baking the outsides fully while the inside stays liquid for the lava part. You don’t want to go over 16 minutes

  10. Let sit for 2 minutes and take a knife around the edge to make sure you can pop it out

  11. Add a plate over the top and flip it carefully to pop it out

  12. Coat in powdered sugar and eat immediately

This was so amazing. You can use any type of chocolate you’d like. This was warm and heavenly. The cake came out great, the outsides were baked perfectly soft and the inside was warm, melted and gooey in the best ways. This was easy and is a great dessert. The short bake works well and you can make the mix early and pop it in the fridge to save. Make it before dinner and bake after fast and easy.
