Holiday Baking Month: Jelly Shortbread Rounds

Prep: 40 minutes Bake: 12 minutes

My friend Liz of Lizwritesstuff.com has an amazing shortbread recipe and was kind enough to share it with me. Then I added some of my Wild Berry Compote/Jam to create a fun cookie that’s not too sweet and fun as you go. Most of the prep time is for making the jam recipe above which then needs at least 20 to chill as well. Otherwise this takes about 20 minutes total.

Ingredients

  • 2 cups soft butter

  • 1 cup sugar

  • 2 tsp vanilla extract

  • 4 cups flour

  1. Preheat oven to 350 F (180 C)

  2. In a bowl add the butter and sugar and cream this together.

  3. Add the vanilla and mix well

  4. Add the flour to this and mix super well. This will turn crumbly but can be pressed together to be formed

  5. Ball this together and sprinkle some flour on top if needed to roll the dough out. You can choose the thickness but a couple centimeters thick is sufficient

  6. Grab 2 circle cutters, one smaller than the other

  7. Cut out even amount of bigger circles

  8. Take half and cut out the centers with the smaller circles

  9. Lay flat on a tray and bake about 10-12 minutes, the edges might start to brown but they don’t really change much otherwise

  10. Let cool fully, they should be slightly hard when pressed

  11. Take a pair of full circle and non.

  12. Flip the full circle over

  13. Take a dollop of jam and add to center of the circle

  14. Add a cut out circle to the top so the jam pops through and press together

  15. Do this with all of them

Afterthoughts

These were so tasty. The shortbread cookies are amazing on their own and the jam is a perfect addition that isn’t too sweet so that it’ll change the taste palate. This was easy to make and fun to eat.
