C’est La Cuisine: Tea Sandwiches

The theme was spring so the first thing that came to mind was flowers and berries. Then a picnic and that lead us here: British High Tea. High tea has finger food that is meant to be easy to consume and often you see it depicted with sandwiches, scones, and mini treats. Here are a couple sandwich options! Makes about 8 slices each.

Ingredients

Egg Salad Sandwich

  • 4 slices potato or white bread

  • 3 eggs

  • 1 1/2 tbls yellow mustard

  • 2 tbls mayo

  • Handful of watercress (arugula works too)

Cucumber Sandwich

  • 4 slices potato or white bread

  • 1 small cucumber

  • 2 tbls herb and onion cream cheese (or to taste)

Prep

Egg Salad Sandwich

  1. Set a pot of water to boiling and add the eggs to hard boil around 8-12 minutes

  2. Remove from water and run under cold water and let chill before peeling

  3. Peel eggs fully

  4. Cut in half and remove whites and yolks

  5. Add the yolks to a small bowl with the mustard and mayo

  6. Use a fork to smash and stir together. Adjust mayo and mustard to make creamier or dryer

  7. Shred whites and add to bowl mixing all together

  8. Spread onto 2 slices of potato bread

  9. Top with arugula and close with two more slices of bread

  10. Slice into 4 triangular pieces

  11. Serve

Cucumber Sandwich

  1. Slice cucumber into thin slices

  2. Take 2 slices of bread and layer cucumber pieces onto it

  3. Spread cream cheese over other 2 slices

  4. Combine to make a sandwich

  5. Slice into 4 triangular pieces

  6. Serve

Afterthoughts

These are fast and so fun to make and just as fun to eat. Small finger sandwiches are a great lunch or snack and can be fun for any age. Impress with a snack board or get fancy and serve in a tiered tray with tea and treats.
